Creamy Pumpkin Pasta

This has to be one of the quickest vegan meals that I’ve made so far. The noodles were the only thing that took a bit of time. Creamy warm and delicious, sort of looks like Mac n Cheese but it tastes way better.

 

Ingredients:

  • 3 cloves of Garlic
  • 1-2 cans of Pumpkin puree
  • 3 quarters of Coconut Milk
  • Extra Virgin Olive Oil
  • Pasta Noodles
  • Pinch of Salt

Directions:

  1. Set your noodles to boil until soft
  2. Place 2 tbsps of oil in saucepan, add minced garlic
  3. Add 1-2 cans of pumpkin puree into saucepan
  4. Add three-quarters of a cup of coconut milk into saucepan
  5. Add a pinch of salt
  6. Stir until smooth & add finished pasta noodles into saucepan, mix together and serve
