Coconut Tahini Bowl

        This sweet, nutty & spicy salad/rice bowl has been added to my collection of quick and fast vegan recipe comfort foods. This meal is absolutely satisfying and mouthwatering, and best of all it takes 5 minutes to cook. Thank me later 🙂

Ingredients:

  • 2 Tbsp of Tahini
  • 3/4 cup of Coconut Milk
  • 2 Tbsp of Sriracha
  • 1 Tbsp of Sugar
  • 1 Tbsp of Soya Sauce
  • Rice
  • 1 Tbsp of Lime Juice
  • 2 Tbsp of Sesame Seed Oil
  • Spinach/Arugula Salad
  • Vegetables of your choice

 

Directions:

  1. Place 2 Tbsp of Tahini in a bowl, add 3/4 of Coconut milk, 2 Tbsp of Sriracha and 1 Tbsp of Sugar and lime. Mix until mixture is smooth in consistency.
  2. Place chopped vegetables into the saucepan along with 2 Tbsp of Sesame Seed Oil, cover with the lid and allow vegetables to soften.
  3. Pour Tahini sauce mixture into the saucepan and allow to cook until vegetables are desired softness. Optional: Save some of the Tahini mixtures for garnish and dressing after plated.
  4. Place Spinach/Arugula Salad in a bowl,  rice on top of the salad followed by Tahini vegetables from your saucepan. Serve
